Thai Sweet Potato Lentil Curry

Thai Sweet Potato Lentil Curry

This one dish recipe is packed with flavor and good nutrition too. Customize the “heat” by choosing your favorite curry paste and veggies!

Prep Time: 20-25 minutes    Simmer Time: 30-40 minutes

WHAT YOU NEED:

1 Tbsp. vegetable oil (vegetable, grapeseed, coconut, etc)

1 onion, chopped

1 – 2 Tbsp. diced or grated raw ginger root

2 – 3 tsp. Thai yellow curry paste (milder) or red curry paste (spicier) or green curry paste (if you dare)

1 large sweet potato, peeled and cut into 1-inch chunks (about 2 cups)

¾ cup dried lentils, rinsed and drained

1 can (14 oz. or about 2 cups) unsweetened coconut milk (light or full fat)

1½ - 2 cups water

1 - 2 tsp. salt

Vegetable Of Choice: 2 cups broccoli/cauliflower florets, zucchini cubes, mushrooms, baby spinach, etc.

 1 fresh lime (for about 2 Tbsp. fresh lime juice and 1/2 tsp. grated lime zest)

Cooked rice; fresh basil or cilantro; lime wedges (serving suggestions)

MAKING IT:

Heat oil in a large saucepan over a medium heat; sauté onion for about 5 minutes. Add ginger root and curry paste to pan, and stir for a few seconds longer until fragrant. Add sweet potatoes, lentils, coconut milk, 1½ cups of the water, and salt.  Bring to a boil; turn heat down and simmer, uncovered, for 25 - 30 minutes or until potatoes and lentils are tender. 

After about 25-30 minutes, add your VEGETABLE OF CHOICE, lime juice and lime zest. Adjust seasoning as needed. Simmer for about 5-10 minutes more or until vegetables are desired tenderness. Add additional water if curry becomes too thick.  Serve with cooked rice and garnish with fresh basil, cilantro, and limes wedges, if desired.  Makes about 6 main dish servings.

TIPS:  

Mekhala brand curry pastes are delicious and vegan/gluten free too! The 3.5 oz. jars are available in yellow, red and green varieties. Great to have in your fridge for an easy, flavorful seasoning ingredient!
