Satay Style Roasted Cauliflower

Satay Style Roasted Cauliflower

Satay is a popular dish in Southeast Asia.  Here the flavors of satay give a new twist to roasted cauliflower.

Prep Time: 10 minutes    Total Time: 30 minutes

WHAT YOU NEED:

1 large cauliflower, cored and cut into large florets (about 6 cups)

1 Tbsp. olive oil

2 tsp. satay seasoning (see substitute below)

1/8 tsp. pepper

MAKING IT:

Preheat oven to 425◦F (convection bake, if available).   In large bowl combine cauliflower pieces and olive oil to coat well. Add all the seasonings, mixing well.

Place cauliflower on rimmed baking sheet that has been lined with parchment paper.  Bake for 20 minutes, stirring every 5 minutes.  Serves 4.

TIPS:

Satay seasoning substitute: Blend together 1 tsp. mild curry powder + 1 tsp. ground ginger + 1 tsp. brown sugar
