Skillet Blueberry Cobbler on the Grill
WHAT YOU NEED:
4 cups fresh blueberries, rinsed and drained
1/3 cup sugar
1½ Tbsp. corn starch or all-purpose flour
Juice of 1 lemon (about 3 Tbsp.)
Lemon zest from 1 lemon (about 1 tsp.)
For the Topping:
1½ cups flour
½ tsp. salt
1/3 cup sugar
2 tsp. baking powder
½ tsp. cinnamon
6 Tbsp. cold butter, cut into 1/2-inch pieces
¾ cup milk
MAKING IT:
Preheat gas grill or oven to 375ºF. Toss together in a large bowl: blueberries, sugar, corn starch, lemon juice and lemon zest. Set aside.
In a separate bowl, stir together flour, salt, sugar, baking powder and cinnamon. Using a fork/knife or pastry blender or your hands, cut butter into flour mixture until crumbly. Add milk and stir just until flour is moistened.
Spoon blueberries into a 10-inch cast iron skillet (skillet needs to be at least 2-inches deep. Using large spoon, drop batter over the berries. Place on grill and close cover to bake until the topping is brown and juices bubble, about 35 to 40 minutes (monitor grill temperature frequently, adjust as necessary). To bake in the oven, use 1-1/2 quart baking dish or cast iron skillet placed on rimmed baking sheet; bake uncovered at 375ºF for 35-40 minutes. Makes 6-8 servings.
