Grilled Peaches with Maple Bourbon Glaze

Grilled peaches make a unique side dish for meats or fish-- or serve with a scoop of ice cream for a delicious summer dessert. You might even try serving them with waffles!

Prep Time: 10 minutes    Grilling Time: 8-10 minutes

WHAT YOU NEED:

4 medium “free stone” peaches, ripe but still firm, rinsed and patted dry

3 Tbsp. pure maple syrup

3 Tbsp. bourbon whiskey

1 Tbsp. butter

MAKING IT:

Cut the peaches in half along middle seam down to the pit; twist and remove pit and any pit particles that remain.

In a small sauce pan, combine syrup, whiskey and butter.  Heat over medium-low heat until butter melts.

Brush the cut side of each peach with maple-bourbon glaze, reserving leftover glaze to make a Maple Bourbon Glaze Reduction, if desired (see Tip below)

Preheat a gas grill on high until temperature reaches about 450°F (for a charcoal grill, coals should be glowing hot). Place cut side peaches onto grill. Immediately turn heat down to medium and grill undisturbed until grill marks appear, about 5 minutes (may be quicker with charcoal grill).

Turn peaches over to skin side and continue to grill over medium heat for 3-5 minutes (for a charcoal grill, turn peaches and continue to cook on cooler area of grill). Place grilled peaches on a platter and serve immediately or cover and refrigerate for up to 3-4 days. Serves 4.

Optional Finishing Sauce (see Tip below): Drizzle grilled peaches with Maple-Bourbon Glaze Reduction, if desired.

TIPS:

Maple Bourbon Glaze Reduction: Heat the leftover glaze in a small saucepan over high heat, stirring constantly, until it thickens to the consistency of honey.  Drizzle over warm grilled peaches.

To ripen peaches, keep on the counter at room temperature until they reach desired ripeness. Do not put unripe peaches in the refrigerator. To speed up ripening, place peaches in a brown paper bag and fold over the top.
