Grilled Chipotle Carrots

Grilled Chipotle Carrots

Grilling root veggies like carrots brings out amazing sweetness and colors too!

Prep Time: 10 minutes    Grilling Time: 20-25 minutes

WHAT YOU NEED:

1½ lbs. fresh large carrots, rinsed, peeled and cut into strips or slices about ½-inch thick

1 Tbsp. olive oil

½ tsp. chipotle powder (or to taste)

½ tsp. salt (or to taste)

MAKING IT:

In a bowl, toss carrots with olive oil to coat evenly. Stir in chipotle powder and salt, stirring well.

Preheat grill to medium-high heat with perforated grill tray or grill basket placed on grate.  When surface is hot, spread carrots evenly over grill tray or basket.  Turn heat to medium-low. Grill carrots for about 20-25 minutes, stirring often, until crisp-tender.  Serves 4-6.

TIPS:

Quick Tip: Use precut and prewashed baby carrots for this recipe! No need to peel or cut, just toss with olive oil and seasonings then grill.
