Lemon Garlic Shrimp

Lemon Garlic Shrimp

A recipe for a skillet, grill or broiler — great solo or shrimp can be tossed with cooked pasta

Prep Time: 20 minutes    Marinating Time: 2-6 hours   Cook Time: 5 minutes

WHAT YOU NEED:

1-1/2 lbs. large shrimp, peeled and deveined

1 lemon (for 2 Tbsp. lemon juice and 2 tsp. lemon zest)

2-3 cloves of garlic, minced

1/3 cup dry white wine

¼ cup olive oil

2 Tbsp. chopped fresh Italian parsley (or 2 tsp. dried parsley)

1 Tbsp. chopped fresh thyme (or 1 tsp. dried thyme)

1 tsp. chopped chili pepper or dash of tabasco sauce (optional)

 

MAKING IT:

Place cleaned shrimp in medium glass or stainless steel bowl. 

Zest the lemon with grater or zester; set aside.  Juice the lemon into a small bowl.   To lemon juice, add lemon zest, garlic, wine, olive oil, herbs and chili pepper.  Whisk marinade well.

Pour marinade over shrimp, making sure shrimp are completely covered.  Cover and refrigerate from 2-6 hours.

Remove shrimp from marinade using slotted spoon; discard marinade (or make it into a Sauce with the tip below). Cook shrimp in skillet over medium heat until opaque and pink, turning each shrimp once during cooking.  If using a barbeque grill or oven broiler, lightly brush on additional marinade when you turn the shrimp over half way through grilling or broiling.

Serve immediately, tossing shrimp with cooked pasta if desired.   Makes 4 servings.

TIPS:

Instead of discarding leftover marinade, heat it and make it into a lemony sauce!  Heat marinade in a sauce pan and boil for 1 minute (this kills any microorganisms). Sauce is great when serving Lemon Garlic Shrimp over cooked pasta!
