Balsamic Plum Sauce for Meat or Fish

Balsamic Plum Sauce for Meat or Fish

Dress up grilled meats & fish with this easy sauce—it’s especially good with pork or chicken.

Prep Time: 15 minutes    Total Time: 20-25 minutes

WHAT YOU NEED:

3 medium black plums, pits and stems removed and sliced thinly

2 tsp. olive oil

½ cup thinly sliced onion or shallots

1 tsp grated or diced fresh ginger root

2/3 cup dry red wine

1/3 cup balsamic vinegar

1 Tbsp. honey or maple syrup

½ tsp. salt (or to taste)

1 Tbsp. fresh thyme leaves or 1 tsp. dried thyme leaves

MAKING IT:

Heat oil in a medium non-stick saucepan over a medium heat; sauté onion, for about 5 minutes. Add ginger and stir for a few seconds until fragrant. Add red wine, vinegar, honey and salt.  Continue to cook sauce over medium heat for about 5-8 minutes, stirring frequently. The liquid will be reduced to the consistency of maple syrup and the plums will soften slightly; when this happens remove pan from heat (adding more red wine or water if sauce gets too thick). Stir in thyme leaves.  Sauce can be covered and left in the pan for up to ½ hour while meat or fish is being prepared OR refrigerate until ready to use. Makes about 1-1¼ cups, enough sauce to serve with 1 lb. cooked meat or fish.
