Swedish Refrigerator Cookies

A delicious homemade “slice n’ bake” cookie from Grandma Kate of Meredosia Illinois

Prep Time: 20 minutes    Bake Time: 8-10 minutes

WHAT YOU NEED:

1/2 cup softened butter

1 cup brown sugar

1 cup white sugar

2 eggs slightly beaten

1 tsp. vanilla

2 ½ cups flour 

1 tsp. baking soda

1 tsp. salt

1 cup rolled oats (5 min cook or quick cooking)

1 cup coconut

1 cup pecans, finely chopped

MAKING IT:

Cream together butter and both sugars.   Add eggs and vanilla, mixing well.  In a bowl, sift together flour, soda and salt.  Blend flour mixture into egg-sugar mixture.  Stir in oatmeal, coconut and nuts.  

Form dough into two long rolls about 2-inches in diameter.  Wrap each in wax paper and refrigerate at least 2 hours or overnight.  Preheat oven to 375◦ F.  When chilled, cut into 1/4-inch slices and place on greased cookie sheet. Bake for 8-10 minutes until lightly browned.  Cool on rack.  Makes about 5 dozen.

TIPS:

Dough logs which are wrapped tightly in plastic wrap may be frozen for up to 3 months.  Thaw dough in refrigerator before slicing and baking.
