Chipotle Honey Vinaigrette

Chipotle Honey Vinaigrette

Prep Time: 5 minutes   

WHAT YOU NEED:

1 chipotle chile, canned in adobo sauce (can be increased if desired; see Tip below)

1 Tbsp. adobo sauce (from above can)

1 clove garlic, peeled

¼ cup red wine vinegar

1 medium lime (for 2 Tbsp. freshly squeezed juice)

1 Tbsp. fresh oregano leaves or 1 tsp. dried oregano

½ tsp. salt

¼ tsp. ground cumin

1 Tbsp. honey

1 cup extra virgin olive oil or canola oil

MAKING IT:

Place 1 chipotle chile and 1 Tbsp. adobo sauce in blender jar or food processor; add all remaining ingredients.  Blend/pulse until smooth and creamy.  Makes about 1-1/2 cups dressing. Store in refrigerator in a covered jar or other container for up to 2 weeks.

Nutrition Information per serving (2 Tbsp): 170 Calories; 18g Total Fat; (2.5g Sat Fat; 0g Trans Fat); 0mg Cholesterol; 110mg Sodium; 2g Total Carb; 0g Fiber; 2g Sugars (includes 1g Added Sugars); 0g Protein

TIPS:

To make a smaller amount, halve all the ingredients (best to use a small jar blender attachment or smoothie maker).

Use as a marinade for grilled veggies or your protein of choice.

If you like a spicier dressing, add 2 (or more!) canned chipotle chiles, along with 1 Tbsp. adobo sauce for each chile pepper added.

Substitute: for each canned chipotle in adobo sauce, use 1 tsp. chipotle powder plus 1 Tbsp. tomato paste or ketchup.

For a sweeter dressing, add 2 Tbsp. honey.
