Harvest Apple Cake

Harvest Apple Cake

A moist cake that full of apples—it’s a family favorite throughout the fall and winter months!

Prep Time: 25 minutes    Total Time: 1 hour 25 minutes

WHAT YOU NEED:

4-4½ cups peeled, diced apples

2 cups granulated sugar

3 cups all purpose flour

2 tsp. cinnamon

2 tsp. baking powder

1 tsp. baking soda

1 cup vegetable oil (canola or other)

2 eggs

1 tsp. vanilla

1 cup chopped walnuts

MAKING IT:

Peel and dice apples; place in medium bowl.  Stir sugar into apples and let stand for at least 10 minutes. 

Preheat oven to 350◦ F. Sift together flour, cinnamon, baking powder, baking soda into a large bowl.  In small bowl, whisk together oil, eggs and vanilla.

Stir egg mixture and apples into flour mixture, blending well until all flour is moistened (the batter will be quite thick).  Turn batter into well greased10-inch bundt pan or into two 4 x 8-inch loaf pans.

Bake 60-70 minutes (for bundt pan) or 40-45 minutes (for loaf pans).  Let cake cool for 10 minutes in the pan before removing to a wire cooling rack.

TIPS:

Garnish with a dusting of powdered sugar before serving.

Raisins may be substituted for walnuts; or try ½ cup of each.

Freezes well for up to 4 months; wrap tightly in plastic wrap.
