Fish Tacos with Citrus Slaw

Fish Tacos with Citrus Slaw

Reminiscent of street tacos, this recipe can be made with almost any type of fish!

Prep Time: 30 minutes    Total Time: 45

WHAT YOU NEED:

Fish Tacos:

1 pound boneless, skinless fish fillet such as cod or halibut (most types of fish work!)

1/4 cup flour

½ tsp. salt

½ tsp. ground chipotle

½ tsp. ground cumin

2 Tbsp. olive oil

8 corn tortillas (6-inch), warmed

Citrus Slaw:

3 cups very thinly sliced green or red cabbage (about 6 oz)

1/3 cup thinly sliced red onion

1-1/2 tsp. grated lime peel (peel from lime)

2 Tbsp. fresh lime juice (about 1 medium lime, juiced)

2 Tbsp. olive oil

2 tsp. agave syrup or honey

Salt and freshly ground black pepper (optional and to taste)

Garnishes: avocado cubes or guacamole; cherry tomato halves; chopped cilantro; pico de gallo or salsa; lime wedges

 MAKING IT:

Prepare Citrus Slaw:  Mix together sliced cabbage and onion in a large bowl.  In a small bowl, whisk together lime peel, lime juice, olive oil and agave syrup.  Toss cabbage with lime dressing.  Season with salt and pepper, if desired.  Refrigerate slaw while preparing fish tacos. Makes about 3 cups.  (Prepare garnishes now and refrigerate)

Prepare Tacos: Cut fish into 8 equal pieces (about 2 oz each).  Combine flour, salt and seasonings in a shallow dish.  Coat each piece of fish in flour, shaking off excess (discard remaining flour).  Heat olive oil in non-stick skillet over medium heat.  Add fish and cook on medium-low until fish is opaque and reaches 145◦F when measured with a food thermometer. (cook time depends on thickness of fish).

Place one piece of fish on each warmed tortilla.  Top with slaw.  Serve immediately, passing garnishes. Makes 8 tacos (4 servings)

TIPS:

Prepare the slaw and garnishes first, refrigerate until ready to serve tacos.

Try this recipe with a variety of sustainable seafood varieties: cod, sable fish, or cat fish. Use firmer fish like cod won’t flake as easily and give chunkier texture. Cat fish will flake more easily.
