Nantucket Cranberry Oat Bars

Nantucket Cranberry Oat Bars

These sweet-tart bars are a great for an on-the-go snack or breakfast.

Prep Time: 15 min.                               Baking Time: 30-40 min.

WHAT YOU NEED:

1/2 cup (1 stick) butter, softened

1/3 cup vegetable oil (such as canola)

3/4 cup brown sugar

1 egg

2 cups rolled oats

1 cup all purpose flour

¾ cup whole wheat flour

2 tsp. cinnamon

½ tsp. baking soda

½ tsp. salt

2 cups whole fresh cranberries, frozen (do not thaw)

3 Tbsp. water

1 cup chopped walnuts

MAKING IT:

Preheat oven to 350◦F.  With mixer on medium speed, cream together butter, oil and brown sugar; add egg and mix thoroughly. 

In separate bowl combine dry ingredients: oats, flours, cinnamon, baking soda, salt; stir together well.  Add oat-flour mixture to butter-sugar mixture on low speed.

In food processor, pulse the frozen cranberries until they are finely chopped.  Add cranberries, water and nuts to dough, mixing on medium low speed until cranberries and nuts are distributed (do not over mix).

Press dough evenly into lightly greased 13” x 9” baking pan making sure it reaches the corners.  Bake at 350◦F for 30-40 minutes or until edges are lightly brown.  Cool and cut into bars.

Makes 24 bars.
