Maple Glazed Rutabaga

WHAT YOU NEED:
1 rutabaga (a 1.5 lbs. rutabaga will yield about 4 cups cubed)
2 medium yellow onions, sliced
2 Tbsp. olive oil
1/3 cup water
1 - 2 Tbsp. pure maple syrup
¼- ½ tsp. salt
1 Tbsp. finely chopped fresh sage (about 5 sage leaves)
Freshly ground black pepper.
MAKING IT:
Peel rutabaga and cut into ¾-inch cubes. Peel and halve the onions; slice into ½ inch slices. Heat a large skillet over medium heat; add olive oil. Sauté rutabaga and onions for about 2 minutes.
Add to the pan water, maple syrup and salt; stir well. Bring to a boil over high heat. Once boiling, turn down heat to medium-low, cover pan, and simmer for about 8-10 minutes (the rutabaga should be still slightly firm). Uncover the pan and turn heat to high. Stir constantly until all the water is gone and the vegetables start to brown and caramelize. Stir in sage and additional salt and pepper to taste.
